Fancy Italian Kid Macaroni


The Story

I like to think I live a pretty busy life. I wake up and go to work, where my days are spent making top moments in sporting events and ESPN programming accessible to people on social media. It’s a pretty dope gig, and I love every minute of it. But like I said, it’s busy.

When I’m not working, I’m recipe testing, trying to make my blog better, and doing my best to being a half adult. And sometimes, my busy life gets the best of me, and I need a break to completely remove myself from everything in the world besides Netflix and food.

When I was in college, my life was even more busy. I balanced an internship, job with Stony Brook athletics, a full 21-credit course-load, all while doing my best to go out and hopefully dance my butt off at the bar. My budget was tight, my stomach was empty, and I came up with this concoction to take me through those Sundays where I had absolutely nothing to do. It happened roughly once a month.

I call it “fancy Italian kid” because of the garlic, Parmesan and oregano. However, call it whatever you want. Change up the ratios, add more garlic if you’re a lover or add more cheese if you’re me. It’s up to you. Just promise that while you eat this dish, you’ll be completely removed from everything like I am when I dive in. It’s really the best way to enjoy.

Fancy Italian Kid Macaroni

Prep time: 5 minutes | Cook time: 12-15 minutes | Servings: 1-2


  • 1 cup dry Cavatappi pasta
  • 1 tbsp olive oil
  • 1/4 grated Parmesan cheese
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper


  1. Bring 4 cups of salted water to a boil, add pasta and cook for 12-15 minutes.
  2. Remove from heat, drain pasta, and preserve 1/4 cup of the pasta water.
  3. Stir in the remaining ingredients, and add in pasta water as needed if pasta sticks together.
  4. Serve immediately for best taste.
